Ingredients

Angel hair pasta with smoked salmon & asparagus

  • 375 g angel hair pasta
  • 1/4 cup (60ml) olive oil
  • 250 g asparagus, trimmed, chopped coarsely
  • 150 g smoked salmon, sliced thinly
  • 2 tbsp rinsed, drained baby capers
  • 1/3 cup finely chopped fresh chives
  • 75 g baby rocket leaves
  • 1 lemon, cut into wedges

Steps

Angel hair pasta with smoked salmon & asparagus

  1. Cook pasta in large saucepan of boiling water until tender; drain. Return pasta to pan.
  2. Meanwhile, heat oil in small frying pan; cook asparagus, stirring, until tender.
  3. Add asparagus, salmon, capers, chives and rocket to pasta; toss to combine. Serve pasta with lemon wedges.
