Keep the little ones busy these school holidays with these mini frozen delights. If you prefer, you can swap the ice-cream for your favourite flavour - strawberry is sure to be popular with the kids!

Ingredients

Chocolate mint bombes

  • 12 choc-coated mint biscuits
  • 1 L mint chocolate ice-cream
  • 220 g bottle instant setting chocolate toppin
  • mint leaves, to garnish (optional)

Steps

Chocolate mint bombes

  1. Arrange biscuits on an oven tray; freeze for 10 minutes.
  2. Place a scoop of ice-cream on top of each biscuit, pressing down slightly.
  3. Drizzle chocolate topping over ice-cream. Freeze for 10 minutes or until set. Serve garnished with mint leaves (if using).
