Chorizo hot dogs with chimichurri sauce

With creamy avocado and homemade chimichurri sauce, these gourmet chorizo hot dogs are sure to impress. Plus, they'll be ready in less than half an hour - win!


Chimichurri sauce

  • 1/2 cup light olive oil
  • 1/2 cup flat-leaf parsley
  • 1/2 cup coriander leaves
  • 1/4 cup red wine vinegar
  • 1 fresh long red chilli, chopped
  • 2 tsp dried oregano
  • 2 cloves garlic, chopped

Chorizo hot dogs

  • 4 cured chorizo sausages, halved lengthwise
  • 4 hot dog rolls, split
  • 1 red capsicum, thinly sliced
  • 1 red onion, thinly sliced
  • 1 avocado, sliced


Chorizo hot dogs with chimichurri sauce

  1. To make Chimichurri sauce; place oil, parsley, coriander, vinegar, chilli, oregano and garlic in a food processor; process until almost smooth.
  2. Heat a char-grill pan over moderate heat. Add sausage to grill; cook and turn for 4 minutes or until browned.
  3. Fill each roll with some of the capsicum,onion, a sausage and avocado.
  4. Serve drizzled with Chimichurri Sauce.
