These cute coconut and passionfruit snowmen taste as incredible as they look. Plus, as a no-bake recipe, it is perfect for getting kids into the kitchen - and into the Christmas spirit!


Coconut and passionfruit snowmen

  • 250 g plain sweet biscuits
  • 2 cups desiccated coconut
  • 395 g can sweetened condensed milk
  • 1/3 cup passionfruit pulp, strained through a sieve
  • 2 tsp lemon zest, finely grated
  • 1/2 cup white chocolate melts, melted
  • 1/2 cup milk chocolate melts, melted
  • mini m&m's, trimmed rainbow sour straps, to decorate


Coconut and passionfruit snowmen

  1. In a food processor pulse biscuits to fine crumbs. Transfer to a bowl. Add condensed milk, 1 cup coconut, passionfruit and zest until combined.
  2. Line a oven tray with baking paper. Place remaining coconut in a bowl. Using 1 tablespoon of biscuit mixture, roll into a ball and toss in coconut to coat. Transfer to tray. Repeat to make 15 balls.
  3. Using 3 teaspoons of mixture, roll into a smaller ball and toss in coconut to coat. Repeat to make 15 balls. Chill until firm.
  4. Using a little melted chocolate to adhere, place one smaller ball on top of larger ball to form snowman. Chill until set.
  5. Transfer melted milk chocolate to a small snaplock bag and snip a small edge from one corner. Use a little melted chocolate to stick trimmed sour strap length to head to form earmuffs and attach 2 mini M&M's to edges of head to form earmuffs. Pipe two eyes on face and press in a halved mini M&M to form nose.
  6. Tie a trimmed rainbow sour strap length around middle of snowman to form scarf and pipe three buttons onto base of snowman using melted milk chocolate.
