Dried fruit jam

Sweet, fruity and fragrant, this beautiful spiced dried fruit jam is wonderful spread on scones, bagels or a thick slice of fluffy sourdough. Prepare it as a gift for your friends and family for the holidays.

Ingredients

  • 3 cups dried figs, chopped
  • 1 1/2 cups dried apples, chopped
  • 1 cup dried peaches, chopped
  • 1 L water
  • 1 1/2 L water, extra
  • 1 lemon, finely grated rind and juice
  • 2 cinnamon sticks
  • 10 cups sugar
  • 50 g packet jam setter

Steps

  1. In a large bowl, combine fruit, 1 litre water, rind and cinnamon. Cover and stand overnight.
  2. In a large saucepan, combine undrained fruit mixture, extra water and lemon juice. Bring to boil. Reduce heat and simmer, covered, 10-15 minutes, until fruit has softened.
  3. Measure fruit mixture. Return to saucepan with 1 cup sugar for each cup of fruit.
  4. Stir mixture over low heat until sugar dissolves. Bring to boil and boil uncovered, without stirring, 40-45 minutes. Stir in jam setter and continue boiling 5-10 minutes until jam sets to a gel when tested. Remove from heat. Stand 10 minutes.
  5. Pour into warm sterilised jars and seal immediately. Store jam in a cool, dry place. Chill once opened.
