Easy sausage rolls

  • 1 carrot, coarsely grated
  • 1 zucchini, coarsely grated
  • 500 g sausage beef mince
  • 500 g beef mince
  • 3/4 cup soft fresh breadcrumbs
  • 1 onion, finely chopped
  • 1 egg, plus 1 extra, lightly whisked
  • 2 tbsp tomato paste
  • 2 tbsp barbecue sauce
  • 6 sheets frozen puff pastry, thawed, cut in half
  • 1 tbsp sesame seeds
  • tomato sauce, to serve


Easy sausage rolls

  1. Preheat oven to 200ºC/180ºC fan-forced. Grease and line 2 oven trays with baking paper.
  2. Using hands, squeeze excess liquid from carrot and zucchini. Place in a large bowl. Add the sausage mince, beef mince, breadcrumbs, onion, egg, tomato paste and barbecue sauce; mix well.
  3. To make 6 sausage rolls at a time, place a piece of pastry on a clean work surface. Spoon mince mixture into a large piping bag fitted with a 2cm plain nozzle. Pipe mince along one edge of each pastry piece; roll up tightly to seal. Cut into 6 equal portions. Repeat with remaining pastry and mince mixture to make 72 sausage rolls in total.
  4. Arrange sausage rolls, seam-side down, on prepared trays. Brush with extra egg; sprinkle with sesame seeds. Bake for 20 minutes or until golden brown and cooked. Serve with tomato sauce.
