Grilled prawns and calamari with garlic butter

Ingredients

Grilled prawns and calamari with garlic butter

  • 125 g softened butter
  • 2 tbsp parsley, chopped, plus extra to serve
  • 2 cloves garlic, crushed
  • zest of 1 lemon
  • 1 tbsp lemon juice
  • 500 g (4 medium) squid tubes, cleaned, cut into 1cm slices
  • 750 g medium green prawns, peeled, deveined, tails intact
  • 2 tbsp olive oil
  • lemon wedges, crusty bread, to serve

Steps

Grilled prawns and calamari with garlic butter

  1. Stir butter, parsley, garlic and zest together. Season to taste.
  2. In a large bowl, combine squid, prawns, oil and lemon juice.
  3. Preheat a barbecue plate on high. Barbecue prawns and squid, 1-2 minutes each side, brushing with butter mixture, until just cooked through.
  4. Serve straight away with lemon wedges and crusty bread.
