Cheese and capsicum hot dogs

A good old-fashioned hot dog is always a hit with the family so why not treat them to this creative cheese and capsicum version? They'll be done in less than half an hour!

Ingredients

Cheese and capsicum hot dogs

  • 2 tsp vegetable or olive oil
  • 2 onions, thinly sliced
  • 2 cloves garlic, crushed
  • 1 red capsicum, thinly sliced
  • 1 green capsicum, thinly sliced
  • 4 thick pork sausages
  • 4 hot dog bread rolls, split
  • 2 tbsp mild mustard
  • 1 cup tasty cheese, grated
  • mixed salad, to serve

Steps

Cheese and capsicum hot dogs

  1. Heat oil in a large frying pan over moderate heat. Add onion and garlic; cook and stir for 3 minutes or until soft. Add red and green capsicum; cook and stir for 3 minutes or until capsicum is tender. Transfer to a heatproof bowl.
  2. Add sausages to pan; cook and turn for 8 minutes or until browned and cooked. Transfer to a heatproof plate.
  3. Spread bread rolls with mustard. Fill each roll with a quarter of the capsicum mixture and a sausage. Top with cheese. Serve with salad.
