Pork meatball curry

Pork meatball curry
Triple tested. For your success every time.

This is a super quick dinner and a great one for lifting spirits mid-week, with tender pork meatballs in a mild curry sauce and just-cooked green beans.

Pork meatball curry

  • 600 g minced pork
  • 2 tbsp mild curry paste
  • 6 medium (900g) tomatoes, chopped coarsely
  • 150 g green beans, trimmed, halved

Pork meatball curry

  1. Season pork well with plenty of salt and freshly ground black pepper. Roll level tablespoons of pork into 24 balls. Heat oiled large saucepan over medium heat. Cook meatballs about 5 minutes or until browned all over. Remove from pan.
  2. Add curry paste; cook, stirring, until fragrant. Add tomato and 1/3 cup (80ml) cold water; bring to the boil. Simmer, uncovered, stirring occasionally, about 5 minutes or until sauce is thickened slightly
  3. Return meatballs to pan with beans. Simmer, covered, about 10 minutes or until beans are tender. Season to taste.
