1.Scatter baby rocket leaves over the surface of a large serving platter then top with equal-sized amounts of semi-dried tomatoes, bocconcini, smoked mozzarella, marinated mushrooms, and char-grilled eggplant and capsicum pieces.
2.Serve with lightly toasted sliced ciabatta before an Italian main course.
