Steak with Creamy Mushroom Sauce

This classic Aussie pub-style dish is given a delicious makeover using fresh, good quality ingredients to produce a rich, creamy sauce.

Ingredients

Steak with creamy mushroom sauce

  • 1 tbsp vegetable or olive oil
  • 4 x 150g beef round-eye steaks
  • 25 g butter, chopped
  • 1 small brown onion, finely chopped
  • 1 clove garlic, crushed
  • 150 g mixed mushrooms, chopped
  • 2 tbsp plain flour
  • 1/4 cup dry red wine
  • 3/4 cup beef stock
  • 1/3 cup thickened cream
  • 2 tsp finely chopped thyme
  • steamed vegetables, to serve

Steps

Steak with creamy mushroom sauce

  1. In a large frying pan, heat oil over moderately high heat. Cook beef 3-4 minutes each side or until cooked to taste. Transfer to a heatproof plate. Cover with foil; rest for 5 minutes.
  2. In same pan, melt butter over moderate heat. Add onion; cook and stir for 2-3 minutes or until soft. Add garlic and mushroom. Cook and stir 3-5 minutes or until mushroom is soft.
  3. Add flour; cook and stir 1 minute. Stir in wine: bring to the boil. Stir in stock; bring to the boil. Reduce heat; simmer, uncovered, for 3-5 minutes or until slightly thickened.
  4. Add cream, cook and stir for 1 minute or until heated. Season. Serve beef with sauce, thyme and vegies.
