Sausage and bacon wraps with minted pea mash

Tip: the onions will cook more evenly if you spread them out in the pan.

1.Preheat the oven to 180°C. Cut the streaky bacon strips in half and wrap around the sausages, tucking the end under to secure. Arrange on a lined baking tray and spray with oil. Bake in the oven for 20-25 minutes until cooked and golden.
2.For the mash, boil the potatoes for 15-20 minutes or until tender, drain and mash with the butter and peas, adding a dash of milk to make creamy, then season well.
3.Heat the oil in a frying pan and saute the onions for 4-5 minutes over a medium heat until softened and fragrant. Add the vinegar, brown sugar, BBQ sauce and water, then simmer for 8-10 minutes until reduced and saucy.
4.Serve the sausages on the minted pea mash with a spoonful of saucy BBQ onions.

This is my take on the classic bangers and mash. Baking the sausages is the best way to go, especially with the crispy bacon wrap. Put them on ice-block sticks to make it fun for the kids.
